Steps to make Murungakkai Puli Kulambu | Drumstick Tamarind Curry:
- Drumsticks - a whole packet of frozen drumstick (fresh is better, but it wasn't sold here)
- Freshly chopped Coriander leaves for garnish
- 2 tbsp of coconut milk
- Tbsps of Sesame Oil
- Add the mustard seeds to some heated sesame oil. When the mustard seeds start sputtering, add the fenugreek, onion, garlic, curry leaves and the green chillies
- After a couple of minutes, add the drumsticks. Saute for a few minutes and add the spice powders: turmeric, chillie and coriander powder. Give it a good stir and allow it to cook and let the spices cook and become fragrant
- Next add the tomatoes, and about 1/2 cup of water and let it cook. Once the drumsticks have cooked, add the tamarind juice
- Season with salt if needed, and reduce the heat to low. Add the coconut milk, the cumin powder, mix and remove from the heat. Garnish with some coriander leaves
- Serve this along with some freshly made white rice
