The ingredients needed to cook Crunchy hot & sweet chicken:
  1. Provide 1 whole chicken (about 1kg)
  2. Use 1/8 C oil for frying and about 1/2 ltr for deep frying
  3. Take 1 C All purpose Flour
  4. Get 1 tbsp powdered ginger
  5. You need 1 tbsp powdered garlic
  6. Prepare 1 tbsp powdered tandoori
  7. Get 1 tsp salt
  8. Take 1/2 C chopped hoho (about 1 full capsicum)
  9. Use 1 bunch fresh dhania
  10. Get 1 large red onion chopped
  11. Prepare 1 tsp chilli sauce (or 1 whole green chilli chopped)
  12. Take 2 tbsp sugar
  13. Take 2 tbsp honey
  14. Take 1/4 C BBQ sauce
  15. Get 3 large tomatoes chopped
  16. Provide 1 C water
Steps to make Crunchy hot & sweet chicken:
  1. Slice your chicken into chunks..just sizeable ones like the ones in my picture and put them in a large bowl
  2. Heat your oil in a frying pan
  3. Mix flour..spices..salt and pour them in your bowl containing the chicken…mix them together until all the chicken is covered with the flour mix.
  4. Deep fry your pieces until golden brown and very crispy about 15minutes turning the pieces to ensure all sides are well fried..the more pieces you put in the pan the more time they will take to crips (the deep frying can be done in 3 batches for a medium sized pan)
  5. Remove from pan and let them drain in a plate or tray
  6. In a separate cooking pan or sufuria..heat your oil for 30seconds..add onions and chilli sauce..stir and let cook till onions are tender (chilli will cause some chocking fumes..adviced to open windows and doors if possible…ventilate)
  7. Add half your dhania..mostly the stems..let fry for like 10seconds
  8. Add your chopped tomatoes and cover for about 5minutes until your tomatoes are tender enough to mash.mash to for a thick puree.
  9. Add honey and BBQ sauce and stir..add 1C water and let the mixture cook to boil
  10. Add your chicken chunks and fold them to ensure they are well covered by the tomatoe soup…let cook uncovered for about 5minutes then add your remaining dhania and hoho..stir and let cook for about 1minute
  11. Serve with Ugali or Rice..feel free to add more chilli if you need more heat and water for more soup
