The ingredients needed to make Egg curry:
  1. Use 3-4 tbsp yogurt
  2. Use 4 eggs (s) boiled or peeled
  3. Prepare 1 tsp ginger (paste or grated)
  4. Provide 1 tsp garlic (paste or grated)
  5. Take 1/2 cup tomatoes (chopped or grated)
  6. Get 1/2 cup onion (chopped or grated)
  7. Use 1/2 tsp red pepper powder
  8. Take 1/2 tsp coriander powder
  9. Provide 1/2 tsp cumin seeds
  10. You need Salt (to taste approx 1 tsp)
  11. Use 1/2 tsp turmeric powder
  12. Prepare 1-2 hot green pepper (small) fine chopped
  13. Use 1/2 tsp crushed black pepper (optional)
  14. Take 1.5 tbsp oil
  15. Use 1 tbsp cilantro (chopped- optional)
Instructions to make Egg curry:
  1. Heat oil in pan, add cumin seeds when these start sputtering,add onion and fry until brown in color (4-5) now, add ginger, garlic, green chillies fry for 2 min. Add turmeric and red chilli powder and fry for a min.
  2. Now add grated tomato, coriander powder and salt, fry until oil separates.
  3. Remove pan from heat and let the mixture cool for sometime.now add yogurt,1 tbsp at a time and mix after each addition until all yogurt is mixed. Turn on heat and cook for 3-4 min. Continuously stirring the mixture,if gravy looks very thick, add water (2-3 tbsp) to adjust consistency and cook 2-3 mon. More.
  4. Addition notes:- it is important that you stir mixture continuously while adding yogurt a little at a time or you can also blend the mixture with yogurt in blender or food processor this process insures yogurt does not curdle.
  5. Turn off the heat and add eggs to the gravy garnish with coriander leaves and serve hot with chapati or rice.
